Basic Preparation Of Foods: Dairy Produce.

Eggs: Part Two

Poaching: boil 40mm water in a frying pan; add a teaspoon of salt and a teaspoon of vinegar. Crack egg into cup, inspect and tip into water. Turn down the heat. Gather the white around the unbroken yolk with a spoon and simmer for 3-4 mins. Lift out with a fish slice, drain and serve on hot buttered toast.

Scrambling: beat eggs well; add salt, pepper and a dash of milk. Melt enough butter to cover the bottom of the pan. Cook eggs slowly, stirring continuously. Cook in a basin floating in boiling water, if preferred. Serve when almost completely set, in about 5 mins.

Fried: Melt enough fat to easily cover the bottom of a shallow pan. Tip egg in gently and fold the whites around the yolks. When the white has set, baste the yolk to taste and remove whole with a draining spoon.

Baked Eggs: lightly grease an oven-proof dish and pour the egg(s) gently into it. Sprinkle with salt, pepper and butter to taste. Bake in a medium oven and serve in the same pan after the whites have set to your liking.

Omelette: buy a pan and keep it only for omelettes! The base should be smooth and clean. Allow two eggs per person; beat lightly and add salt and pepper to taste. Heat enough butter to cover the base of the pan. When the fat is hot, pour in the eggs; as it sets, raise the handle up and draw set mixture up, allowing the liquid egg to run down onto the hot pan. When all is set, tilt the pan forward and roll the omelette over. Serve immediately on a hot plate. It can be filled with almost anything, before being rolled over.

Pouring Custard: beat 2-3 eggs per 1 pint of milk lightly. Heat the milk and pour gradually over the eggs; add sugar and flavouring; cook in a double pan or jug and hot water until the required thickness has been reached. If it is not to be served immediately, pour a thin layer of water onto the top to prevent a skin forming.

Baked Custard: start as above but then pour the custard into a lightly greased shallow dish; sprinkle sparsely with nutmeg and place the dish in water to halfway up its sides. Bake at 350 F for 35-45 minutes; you can test its solidity by inserting a knife, which should be clean on withdrawal.

Steamed Custard: proceed as for baked custard, but cook in a steamer or a pan in boiling water. The length of cooking time is about the same too.

Custard Tarts: pour pouring custard into unbaked pastry cases and bake in the oven for 40-50 mins. A little jam can be placed in the bottom of the case first, if desired.

North Wales International Race 2010

Covering a total distance of 10 miles and taking in the heist summit in England and Wales the annual International Snowdonia Mountain race is regarded as one of the toughest challenges in Europe. The race starts at Llanberis, just down the road from Mount Snowdon. The run take in the edge of Lake Pardarn and then climbs the mighty mountain range that is Snowdon and then back to Llanberis.

The event started back in 1976, when acting upon suggestions submitted to the village committee, the suggestion of a race submitted by Ken Jones, was upheld. Soon after the first race began, run by 86 runners and won in a time of 1 hour, 12 minutes and 5 whole seconds by a non local, Dave Francis of Bristol.

An Italian village near the foot of the alps, Morbegano, hold their own similar race each year, and in 1980 the race was twinned with the International Snowdonia race. Many runners from the Italian village now make the journey to Wales each year to take part, with many becoming lifelong friend with their Welsh counterparts.

The race was first televised in 1987 and aired on the Welsh TV station S4C, and is now a major event in the national sporting calendar. Runners from ten countries take part in the annual event which now provides a large boost for the local economy and has helped put Llanberis on the map, which see people travelling year round to the town.

Stephen Edwards is the current race organiser, and he has set an objective of attracting some of the big Names in the World of Mountain running to the event in the near future. Steven, a committee member since the age of twelve when he would help his father organise the event said it was an honour for me to be asked if I would take over the organisation of the race, a local lad from Llanberis carrying on the tradition, and I had to really as the committee isn’t getting any younger”

Preparation and organisation for the race has already progressed into a full time job, with planning for the 2010 race well underway. The event will be held in July of summer.

The Basic Preparation Of Foods: Dairy Produce.

EGGS: Part 1

Eggs can be fresh or dried, dried eggs being only chickens’ eggs without the shell and water. Dried egg should be stored in a cool, dry place – it may not be stored in the refrigerator! Store eggs for several days or a week in a cool place not close to strong-smelling foods. An egg stand is an ideal gadget for this. If the eggs are dirty, wipe them clean with a damp cloth- washing will only remove the natural oils which help to preserve the eggs.

Pickled Eggs: eggs laid in the Spring keep better than those laid in the other seasons. Eggs that will not clean-up, must be rejected. Waterglass or the special preparations should be used. If an egg floats to the surface, use it immediately. Try to maintain the ambient temperature between 2 and 8 C and they should keep for 6 to 9 months.

Preparing Eggs for Cooking: break each egg separately into a cup, before adding it to the other ingredients to ensure it is not ‘off’. If you wish to separate the white from the yolk, tip the contents back and forth between the two eggshell halves and the white (albumen) will run off. Beat eggs with a whisk or a fork in an appropriate bowl; whip egg whites with a knife on a dinner plate – a pinch of salt will help.

Raw eggs used to be prescribed for invalids as they are easily digestible, but this not recommended these days due to the ubiquity of salmonella and other diseases. One method, retold here for the curious was to strain a beaten egg into a mug and slowly add a cup of hot milk (or tea, coffee or lemon water; add sugar to taste. Sherry was often added too.

Cooking Eggs: eggs should be cooked very slowly because the albumen cooks at a temperature which is lower than that of boiling water and becomes ‘tough’ at higher temperatures. By the same token, if you use raw egg to thicken a sauce and the liquid is allowed to boil, the sauce will ‘curdle’, i.e. the egg will solidify into small specks, spoiling its texture.

Coddling: produces easily digestible egg-whites, making it an ideal meal for invalids and children. Lower eggs into 3″ (75mm) boiling water; replace lid and remove from heat. Let stand for: 7 mins for medium-, 5 mins for soft- and 20 mins for hard-boiled.

Boiling: lower fresh eggs gently into 75mm 3″ boiling water with a spoon. Replace the lid and boil gently for 3-3″ mins for soft-, 4-5 mins the medium- and 10 mins for hard-boiled eggs.

Place in egg cups and tap the shell to crack it. Allow the steam to escape, which will prevent the egg further cooking. For sandwiches, salads etc,. boil the egg for 12 mins and plunge into cold water. This enables the shell to be easily removed and prevents a black ring around the yolk.

Boarding Dogs In Kennels

Are you the type of dog owner who likes to take your friend with you wherever you go? If you are then you know that that there are occasions when you can do this, but there are also times when you can not, for whatever reason.

On the occasions when that happens, you will usually have to to find a boarding kennels that will take care of your dog while you are away.

A vacation is a time for relaxing, so you do not want to be worrying about your dog, if you can help it. Within your own country, it is not usually a big problem, but if you go abroad, then taking your dog can be more trouble than it is worth. Not only for you, but for your doggy friend as well.

If you can not place your dog with someone it knows, like a member of your family or a neighbour, then the only alternative is a boarding kennels.

I have put my dog in a bad kennel once and I learned a few lessons from that. I placed my Becky in a kennel in a respectable village just outside our town. I was happy with what I saw and the patter of the owner, so I went to Spain, thinking that all was fine for both of us. I had a lovely holiday and went straight to the kennels from the airport on my return, although I had told them a fortnight before that I would pick Becky up the day after my arrival. I just could not wait to see her.

I went to the kennels and they were surprised to see me. Of course, I was a day early. They said that Becky was ‘resting’ and that it would be better to ‘come back tomorrow’. No way! So they took me to see her. I nearly cried. She was sitting in a good sized cage, but on newspaper soaking wet with pee.

She saw me and just looked down at her paws. I called her name again, but she did not want to know. I paid the bill and put her in the car on the front passenger seat where she always sat. She just looked out the window and showed no interest in me at all.

It was three days before she would speak to me again! The moral of this story is not to be impressed by big adverts or impressive locations as I was. Ask your dog-owning friends, write into the local paper inviting recommendations, phone the local animal protection society or the kennel club or look on the Internet.
